Locating, preparing and certifying Donkey's milk
Donkey's milk used for the study of our future products come from Montebaducco farm where there are approximately 450 shedonkeys of different breeds raised in liberty and exclusively fed with organic products made up of alfalfa, barley and oats.
The drinkability of the water used is ensured by the commission that manages public pipes. Animals intended for the production of milk have been subject to a clinical veterinary exam and have been regarded as suitable to produce milk for human consumption and have been subject to a serological exam to detect brucellosis (negative). The quality of the milk is also regularly monitored by certified corporations.
Dairy animals are milked in a suitable installation equipped with all the necessary qualities to guarantee the hygiene of the milking by using automatic milkers and automatic bottling in a sterile environment (glass bottles).
The staff in charge of milking and handling the milk has the appropriate sanitary capabilities and receives regularly training on the hygienic modalities of milking.
The milk is filtered as soon as it has been milked and is refrigerated in an appropriate stainless steel container and then packaged by using suitable equipment inside adapted prefabricated premises.
After packaging, the milk is stored in a fridge at a temperature between 0°C and 4°C until it is issued to the end consumer. Regular checks are carried out by the ASL concerning production, bottling and the lack of bacteria in the raw unpasteurised milk preserved between 0 and 4°C.
